Beets are a great vegetable. The brightly coloured roots are full of important nutrients and lend themselves to a wide variety of dishes. Beets also come in a variety of colours including red, yellow, white or striped. Beets can be roasted, boiled or eaten raw- and don’t throw away those leafy green beet tops. They can be cooked just like leafy green and are delicious steamed or sautéed with a little butter. Good flavour pairings for beets include lemon, dill, parsley, tarragon, cream, goat cheese, apples, carrots and walnuts.

To store cut off beet tops 2 inches from the base and keep in a perforated plastic bag in the vegetable bin of your refrigerator. Stored this way they will keep for several weeks.

Beets are very low in Saturated Fat and Cholesterol. They are also a good source of Vitamin C, Iron and Magnesium, and a very good source of Dietary Fibre, Folate, Potassium and Manganese.
