Garlic scapes are the green part of the garlic that grows above ground. In the spring when last years garlic stores are getting thin, these scapes can be used in place of garlic. They have a wonderful fresh taste but aren’t quite as strong so be sure to taste as you cook.
Store garlic scapes loosely wrapped in plastic in the vegetable bin of your refrigerator for up to two weeks.
Garlic is very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Calcium, Phosphorus and Selenium, and a very good source of Vitamin C, Vitamin B6 and Manganese.
