In Season: September to November
Parsnips have quite a unique flavour despite their similar appearance to carrots. They are more like a cross between a carrot and a potato with a taste all their own. They can be used like carrots or potatoes in most recipes (including carrots cake!) and are packed full of nutrients. Good flavour pairings include; apples, cinnamon, butter, garlic, creamy cheese and maple syrup.
Store parsnips in a perforated plastic bag in the vegetable bin of your refrigerator for up to two weeks.
Parsnips are very low in Saturated Fat, Cholesterol and Sodium. They are also a good source of Potassium, and a very good source of Dietary Fibre, Vitamin C, Vitamin K, Folate and Manganese.
