Pea shoots are the leaves of the traditional garden pea plant. They are harvested from the plant after only 2 - 4 weeks, depending on weather conditions during the growing season, when the leaves are tender, young and bursting with a distinctive pea flavour. They can be eaten raw or easily cooked and used in a variety of recipes. Pea shoots are packed with Vitamins A, C and folic acid.
