Originating in Peru, potatoes are the most widely grown and eaten vegetable. Aside from the tasty Yukon and Russet standbys, you will find a great variety of potatoes at market. Different varieties include; blue potatoes and baby red Cherokees. Experiment with different types to see what you like best. Use blue potatoes to make an impressive potato salad. Potatoes are incredibly versatile and can be steam, boil, roast or bake them.

Store unwashed potatoes in a cool, dark, dry place where they will keep for a month - a paper bag works well for this. They will last longer if you can keep them between 5-10 degrees C. Be sure to keep potatoes away from onions as onions cause them to sprout.

Nutritional Information: 

Potatoes are very low in Saturated Fat, Cholesterol and Sodium. They are also a good source of Dietary Fibre, Vitamin B6 and Potassium, and a very good source of Vitamin C.
