Serves 4-6
  • Olive oil
  • 1 medium red onion, very thinly sliced
  • 1 medium green cabbage, quartered, cored, and very thinly sliced
  • 1 large crisp, sweet apple, such as Golden Delicious, cored and very thinly sliced
  • Salt and freshly ground pepper to taste
  • Apple cider vinegar

Heat olive oil in a Dutch oven on the stove top over medium heat. Add onion and sauté until translucent. Add apple and sauté 2 minutes more. Add cabbage, salt and pepper to taste and a dash of apple cider vinegar. Cook over medium high heat until the cabbage is soft (about 15 minutes). Serve hot, room temperature or cold.
