Yield: 
Serves 4
Ingredients: 
  • 8 small cucumbers
  • 4 tablespoons of chopped mint
  • 1 cup water
  • 1 ½ cups plain yogurt
  • ½ teaspoon ground coriander seed
  • 1 tablespoon lemon juice
  • Salt and freshly ground pepper to taste
Preparation: 

Wash cucumbers and slice in half. Use a spoon to remove the seeds from the centre of the cucumbers and chop them into 1 inch pieces. Put all ingredients in the bowl of a food processor and blend until smooth. Season with salt and pepper and chill until ready to serve.
