A great summer dish!
*You will need two pots, one for cooking the soup, the other with boiling salted water*
Step 1: Peel cucumbers and coarsely chop them. Save the peelings for later.
Step 2: Sweat your onions in the vegetable oil until translucent.
Step 3: Add your sliced ginger, and continue cooking until the smell of ginger becomes apparent.
Step 4: Add your chopped cucumbers. Give a stir and just cover with water.
Step 5: Simmer in pot until cucumbers are soft to the touch.
Step 6: Strain the mixture and purée the mixture in a blender. Chill this mixture.
Step 7: In a separate pot with salted boiling water, boil the cucumber peels until slightly softened and bright green. Remove the peels and cool quickly under cold water or in an ice bath.
Step 8: Once the soup is cooled, purée a portion of it again, but with the addition of the cucumber peel, then reintegrate it with the rest. This will give the soup a beautiful bright green colour. Stir in your lemon juice, and salt and pepper as desired.
