• 2 pounds potatoes, any kind
  • Pinch of salt

Herb Butter:

  • ½ cup butter, softened
  • ½ cup chopped herbs (any combination of leafy fresh herbs such as parsley, basil, sage, chives, tarragon or chervil)
  • 1 garlic clove, mined
  • Salt and freshly ground pepper to taste
  • A pinch of cayenne pepper

Potatoes: Wash, peel and chop potatoes into 1 ½ inch chunks. Place in a sauce pan and cover with cold water. Add a pinch of salt and bring to a boil. Cook potatoes until tender. Drain well and place in a serving dish.

Herb Butter: Stir all ingredients together and melt over potatoes.
