Ingredients: 
  • 4 sweet peppers, either red, yellow, orange or green, halved, seeds and stems removed
  • 2 tablespoons olive oil
  • ¼ teaspoon sea salt
Preparation: 

Preheat oven to 400F. Place peppers in a bowl, pour in olive oil and sprinkle with salt. Toss peppers until covered in oil. Arrange peppers skin side up on a baking sheet and roast in oven until soft and starting to char (black spots). This will take approximately 15-20 minutes.

These peppers will keep for a week in the refrigerator and are delicious on pizza, pasta, or added to sauces, sandwiches, scrambled eggs or soups.
