Yield: 
Serves 4 (as a side)
Ingredients: 
  • 1 bunch of kale
  • 1 tablespoon olive oil
  • 1 clove of garlic
  • Squeeze of fresh lemon juice or a splash of vinegar
  • Salt and freshly ground black pepper to taste
Preparation: 

Wash and dry kale. Remove kale stems and discard. Chop kale into large pieces. Heat oil in a skillet over medium heat. Add garlic and pinch of salt and sauté for 2 minutes. Add kale and cook until dark green and soft (approximately 10 minutes). Remove from heat. Add a squeeze of fresh lemon juice or vinegar and stir. Serve immediately.
