Serves 2-4
  • 1 lb. carrots
  • 3 Tablespoon fresh lemon juice
  • 2 Tablespoon extra virgin olive oil
  • ¼ teaspoon salt, plus more to taste
  • 1/8 teaspoon garlic pressed or crushed (optional)

Wash, peel and julienne carrots. You can use a mandolin slicer, julienne them with a knife or grate them using the largest size on your grater.

Place julienned carrots in a bowl and add lemon juice, oil, salt, pepper and garlic. Toss salad until thoroughly mixed and serve.
