Ingredients: 
  • 1 pound okra, rinsed and trimmed
  • 3 tablespoons olive oil
  • 1 1/2 cups finely chopped red onion
  • 1 1/2 teaspoons kosher salt
  • 1 tablespoon minced garlic
  • 2 cups peeled and chopped tomato
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon freshly ground cardamom
Preparation: 

Slice okra lengthwise. Heat oil in a skillet over medium heat. Add onions and salt and cook until translucent (about 5 minutes). Add garlic and cook for 1 minute more. Reduce heat to medium low and add ginger, pepper, cardamom and okra. Cook uncovered for 20 minutes. Season with salt and pepper and serve alongside rice.
