Salad greens are essentially baby lettuce. Harvested when they're are young and tender, salad greens are fresh tasting. Each variety of greens has it's own unique taste - be sure to try different types.
Store salad greens unwashed in a plastic bag in the refrigerator. If the greens have been washed already, dry them in a salad spinner, wrap in a tea towel (or use paper towel) and place in a plastic bag in vegetable bin of your refrigerator. Salad greens will keep for 3-5 days either way.
Salad greens are very low in Saturated Fat and Cholesterol. They are also a good source of Protein, Calcium, Magnesium and Phosphorus, and a very good source of Dietary Fibre, Vitamin A, Vitamin C, Vitamin K, Thiamin, Riboflavin, Vitamin B6, Folate, Iron, Potassium and Manganese.
