Salsify, sometimes known as oyster plant or vegetable, has a lovely oyster flavour with added sweetness. It is the root of the salsify or goatsbeard flower (which is also edible) and is a great in place of carrots in many recipes. Try it boiled with a little butter and herbs or mash like potatoes.
Store salsify roots in a perforated plastic bag in your refrigerator up to two weeks.
Salsify is low in Sodium, and very low in Cholesterol. It is also a good source of Dietary Fibre, Vitamin C, Riboflavin, Vitamin B6, Potassium and Manganese.
